Sweet Basil Pesto
Ingredients
- 2 cups fresh basil leaves, washed and dried 
- ½ cup lightly salted almonds (or any nut you prefer in your pesto) 
- 2 Tablespoons fresh lemon juice 
- 1 garlic clove 
- ¼ teaspoon salt 
- 1 cup olive oil 
- 1 Tablespoon honey 
- ¼ cup shredded parmesan cheese 
- Freshly ground black pepper to taste 
Directions
- Add lemon juice, nuts, garlic, salt, and pepper to your food processor. Cover and pulse until combined. 
- Add basil, honey, and parmesan. Cover and pulse until combined. 
- Give everything a good stir and cover. Slowly add in olive oil while running the food processor until everything is well combined and the consistency you like. 
- This recipe freezes well. I recommend freezing in ice cube trays and transferring cubes to a ziploc bag.
