Sweet Basil Pesto
Ingredients
2 cups fresh basil leaves, washed and dried
½ cup lightly salted almonds (or any nut you prefer in your pesto)
2 Tablespoons fresh lemon juice
1 garlic clove
¼ teaspoon salt
1 cup olive oil
1 Tablespoon honey
¼ cup shredded parmesan cheese
Freshly ground black pepper to taste
Directions
Add lemon juice, nuts, garlic, salt, and pepper to your food processor. Cover and pulse until combined.
Add basil, honey, and parmesan. Cover and pulse until combined.
Give everything a good stir and cover. Slowly add in olive oil while running the food processor until everything is well combined and the consistency you like.
This recipe freezes well. I recommend freezing in ice cube trays and transferring cubes to a ziploc bag.
