Heirloom Tomato Marinara
Ingredients
8 pounds mixed tomatoes of any variety- heirlooms, romas, or slicers cut into large pieces
1 white onion, quartered
1 head of garlic, peeled
1 cup of tightly packed basil, washed
2 Tablespoons dried oregano
1 Tablespoon dried basil
2 Tablespoons sea salt
1 teaspoon black pepper
1/3 cup olive oil
1/2 cup dry red wine
Directions
In a large dutch oven, heat olive oil over medium-high heat
Add all ingredients and cook uncovered for around 3 hours, stirring every 30 minutes
Cool to room temperature and blend in batches
This recipe freezes well and will last up to 6 months in the freezer
