Taco Sauce
Ingredients:
4 cups roughly chopped cherry tomatoes, stems removed (it’s fine to do a quick chop, you just want to get an accurate measurement of 4 full cups of tomatoes with no air pockets).
1 cup diced onions
1/3 cup tightly packed chopped cilantro
5 cloves of roughly chopped garlic
6 fresh Serrano peppers (or whatever spicy peppers you have)
3/4 cup apple cider vinegar
1/4 cup fresh lime juice
4 tsp sea salt
Directions:
Combine all the ingredients in a big, heavy-bottomed pot.
Cook on medium heat for about 20 minutes, until everything is simmering and tender.
Puree with an immersion blender (or whatever you use to puree) to your desired consistency.
Cook for another 20 minutes on medium heat, stirring occasionally until it’s slightly thickened.
